摘要

Abstract

The polydextrose have important physical and chemical properties,and health functions. It was claimed to water soluble dietary fiber. The structure,the physical and chemical properties,the healthcare properties of polydextrose,and the advantages of polydextrose in the yoghurt industry were reviewed in this paper. And the yoghurt market was analysised,the application status of polydextrose and several representative products was also introduced.
