Abstract
Glutaminase is a key enzyme of glutamine decomposition, it is widely distributed in organisms and human body. The structure, properties of glutaminase, and the application in food and medicine, genetic engineering research progress were reviewed, which reflect the research trend and level of glutaminase at home and abroad.关键词
