Isolation, Identification and Characteristics of Lactobacillus plantarum Strains
摘要
Abstract
[Objective] To screen good strains for pickler starter, isolation, identification and growth characteristics of Lactobacillus plantarum strains from traditional fermented pickles were studied. [Method] Through calcium-dissolving zone, lactate paper chromatography, API method, the growth and production of Lactobacillus plantarum in pickles were studied.[Result] Nine lactobacilli strains were isolated, six Lactobacillus plantarum was identified. Three of them grew well in Chinese cabbage juice, reached logarithmic growth stage when they were cultured after 14 h. The count of the three strains reached 108cfu/ml and the pH values were below 3.50.[Conclusion] Strains were reserved for making pickler starter.关键词
