Effects of Different Treatments on the Extraction of Leaf Protein from Alfalfa

Abstract
[ Objective] The research aimed to explore the optimum extraction conditions of leaf protein from alfalfa. [ Method] Different material-water ratio, hearing temperature, flocculation time and pH were set up to study their effects on the extraction of leaf protein. [ Result ] When the material-water ratio was 1:4, heating temperature was 70℃, flocculation time was 9 min and pH was 5.0, the yield of alfalfa leaf protein and the extraction rate of crude protein were both the highest. [ Conclusion] The research could provide theoretical basis for the development and utilization of leaf protein.关键词
