摘要

Abstract

In this paper, seed capsule of four kinds of black beans which were from different places was got by artificial methods. Anthocyanin was extracted from the seed capsule by ultrasonic wave. Single factor test was taken to compare the anthocyanin content of four kinds of black beans. The results showed that: with other conditions the same, when the extraction time was 20min, the anthocyanin content of the black beans from Suihua was the highest, which was 2. 668 g, when the extraction temperature was 60 ℃, the anthocyanin content of the black beans from Dalian was the highest, which was 2.113 mg/g; when the ratio of feed liquid was 1∶50, the the anthocyanin content of the black beans from Wuchang was the highest, which was 3.035 mg/g; when extraction concentration was 40% , the anthocyanin content of the black beans from Wuchang was the highest, which was 2. 617 mg/g.
