Study on structural change of wheat bran dietary fiber in process of extraction and modification

Abstract
This paper studied on the extraction and modification process of dietary fiber from wheat bran, and focused on the microstructure change during the process of extraction and modification. Meanwhile, the reason caused the solubility of dietary fiber increase after modification was found out.关键词
