摘要

Abstract

In this paper, the effect of ultrasonication treating time, ultrasonication power and ratio of solid to liquid on the protein extraction rate from cereal industry by — product broken rice was investigated. Results showed that the optimal extraction process parameters with ultrasound treatment were as follows: 32 min ultrasonication treating, 495 W ultrasonication power and solid/liquid ratio of 1:15. Under this optimal conditions, the broken rice protein extraction rate was 90.47%.
