大雁肌肉营养成分的分析
Analysis and Evaluation on Nutriment Contents in Muscle of Anser anser
摘要
Abstract
The nutriment ingredients in the muscle of Anser anser were analyzed and evaluated in order to provide reference basis for the deep processing and comprehensive utilization. The nutriment composition such as crude protein, crude fat, crude ash and so on in the muscle of the 13 healthy and same body weight Anser anser were determined. The results indicated that the contents of moisture, crude protein, crude ash, crude fat and energy were 68.94% ,24.10%, 1.37%, 3.44% and 7 431.92 J/g and Cu, Fe, K, Ca, Zn, P per 100 g were 0.98, 7.39, 0.38, 42.00, 2.71, 244.40 mg respectively. In fresh sample of muscle sample, the total contents of 17 amino acids, 7 essential amino acids and 4 delicious amino acids were 175.20, 64.80 and 61.04 mg in per 1 g. These results showed that the Anser anser had a very good prospect for artificial breeding because of its high nutritional value.关键词
