摘要
Abstract
Transglutaminase,which could catalyze an acyl transfer and generate covalent cross-links between protein molecules or intermolecular covalent cross-links to increase nutritional value of protein,is a new food additive with important potential application values.The mechanism,production of transglutaminase and its application in food industry were introduced.关键词
