摘要
Abstract
Antioxidant activity on anthocyanin extracts (the crude and refined) from V accinium uliginosum L .were evaluated with ・ OH ,DPPH ・ ,ABTS+ scavenging and iron reducing force four assays ,undergo-ing simulated stomach ,small intestine ,blood environment .The results showed that scavenging capacity to free radicals and iron reducing force ,the crude anthocyanin extracts > the refined ,and pH1 .5 >pH2 .5 > pH3 .5 > pH4 .5 in simulated stomach environment ,respectively .Antioxidant activity of an-thocyanin extracts in simulated stomach environment > simulated stomach and small intestine environ-ment > simulated stomach and small intestine and blood environment with ・ OH ,DPPH ・ ,ABTS+ scav-enging and iron reducing force four assays .关键词
