Abstract
This article summed up the mechanism of ultrahigh pressure sterilization , the factors (technical parameters, chemi-cal factors, species and characteristics of microbe ) affecting the effects of food sterilization by ultrahigh pressure , as well as the re-search progress in sterilization dynamics , and looked ahead the developmental prospects of ultrahigh pressure technology in food in -dustry.关键词
