摘要

Abstract

The carboxymethyl agar (CMA) was prepared with agar and chloroacetic acid and its charac-terization was analyzed in this essay .The results showed that compared with the original agar ,the dissol-ving temperature ,gelling temperature ,gel melting temperature ,gel strength ,hardness ,fragility ,adhe-siveness ,gumminess and chewiness of CMA tend to go down with the increase in carboxymethyl ;howev-er ,the springiness and cohesiveness of CM A tend to go up .T he original agar and CM A aqueous solutions all exhibited shear thinning characteristics and pseudoplastic fluid .Both the original agar gel and the CMA gel of skeleton structures were found to be porous network textures ,and the skeleton structures of CMA are more compact than those of original agar .
