摘要

Abstract

In this paper ,the Plackett-Burman experimental design was employed to investigate and screen the key factors that effect the grow th of L actobacillus bulgaricus from 7 kinds of carbon sources or prebiotics and 8 kinds of amino acid .We found that ,the most significant carbon source that encourage the grow th of L actobacillus bulgaricus was Glucose ( p =0 .033 ,T=3 .757) .Oligofrutose (p=0 .091 ,T=2 .457) and Inulin (p=0 .061 ,T=2 .926) can also effect the growth of Lactobacillus bulgaricus markedly .These three variables showed positive effect for the growth and significant differences in the more than 90% proba-bility level .Glutamate (T= -1 .005) that from 8 kinds of amino acid showed negative trend , but Hydroxyproline and Tryosine have a greater impact to the proliferation .Therefore ,the a-bove six factors can affect the proliferation of L actobacillus bulgaricus significantly .
