Abstract
Nowadays, dense phase CO2(DPCD) technology gradually emerges in the food industry as a new non-thermal pasteurization technology. This paper summarized the bactericidal mechanism of DPCD, the influencing factors for pasteurization, and its application in food industry, which provides reference for in-depth study and potential application.关键词
