摘要

Abstract

Objective To compare the antioxidation of 20 kinds of vegetables in Jilin area .Methods The antioxi-dation of vegetables were studied by the pyrogallol antioxidation method and the Fenton method .Results The Kid-ney bean was the best vegetable for the hydroxyl radical scavenging .The White radish was the best vegetable for the superoxide anion radical scavenging .Conclusion Different vegetables have different antioxidant activity , which is contributes to the health food choice .
