摘要

Abstract

The purpose of this paper is to study amino acid content and composition of Zingiber strioatum Diels,and to evaluate its amino acid nutrition.The automatic amino acid analyzer is used to test the con-tent of amino acids in immature inflorescence and mature stems and leaves of Zingiber strioatum Diels, and the amino acid ratio coefficient method is used to evaluate the composition of the essential amino acids.The results show that the content of total amino acid in immature inflorescence and mature stems and leaves of Zingiber strioatum Diels were 19.83%and 7.75%respectively,the proportion of essential a-mino acids to total amino acids were 37.17%and 37.55%respectively, are close to the WHO/FAO standard, ratio coefficient of points ( SRC) were 72.6 and 84.02 respectively.Among various kinds of es-sential amino acids,the first limiting amino acid in immature inflorescence of Zingiber strioatum Diels was Met+Cys,mature stems and leaves of Zingiber strioatum Diels had no obvious limiting amino acids.The es-sential amino acids in Zingiber strioatum Diels are relatively complete,and their proportions are reasona-ble,which shows that Zingiber strioautm Diels is a kind of food resources with high nutrional value .
