Effects of Different Air-curing Humidity on Routine Chemical Components and Amino Acid Content of Burley Tobacco

Abstract
To explore modulation technologies for improving inherent quality of burley tobacco and helping to form Maillard aroma precursors,four different humidity environments were set in the process of burley tobacco drying,with Eyan 1 as the material,and the differences in chemical composition and amino acid content of burley tobacco among different humidity drying systems were studied.Results showed that under the mid-wet treatment(humidity was 70%-80%,65%-75%, 65%-75%,40%-50% for wilting,yellowing,browning and stem drying stages,respectively), total sugar,reducing sugar,total nitrogen and potassium contents of burley tobacco were the highest,and nitrogen alkali ratio and potassium chloride ratio were significantly higher than other treatments.The quality of aroma,concentration of aroma,strength,and aftertaste were excellent, with high grade of quality.The total amino acid content was significantly higher than other treatments,increased by 21.02% compared with CK (humidity in the whole process of drying system was 80%-85%),and the contents of aspartic acid,serine, glutamic acid,alanine, tyrosine,isoleucine and phenylalanine were the highest,in which the contents of aspartic acid, serine,glutamic acid and phenylalanine respectively increased by 7.09%,253.92%,86.15% and 388.46% compared with CK.Burley tobacco drying in mid-wet environment promotes the coordination of conventional chemical composition,tobacco smoking level,amino acid content in tobacco leaves,and the content of Maillard type aroma precursors.关键词
