摘要

Abstract

Near-infrared spectroscopy technology has gained more and more attentions of researchers because of its some ad-vantages, such as rapid analysis, more information, non-destructiveness to detected samples, non-pollution, and simple opera-tion.It has been researched and applied in various fields.This paper summed up the advances in the research and application of near-infrared spectroscopy technology in the field of edible oils, mainly including the acidity, peroxide index, fatty acid content, species and its adulteration judgement, and blend oil proportion of edible oils.Although the diversity of edible oil variety, the defi-ciency of near-infrared spectrometer, and the lack of specific software have hindered the application of near-infrared spectroscopy technology in the practical detection of edible oils, this technology certainly has wide applied prospects in the field of edible oils a-long with the further development of the research.
