摘要

Abstract

We used resin as a carrier to immobilize β⁃galactosidase for the production of galactooligosaccharides. Cation exchange resin with the highest absorption rate and recover rate was selected as the carrier. The immobilization condition was optimized through cross⁃linking after immobilization of β⁃galactosidase.The best condition was enzyme load 51�8 U/g resin,pH 6�5,25 ℃, time 12 h;and the concentration of glutaraldehyde of 4%( v/v); the temperature in cross⁃linking action was 40 ℃,the time was 6 h. Under the conditions, the activity of immobilized enzyme was 16�2 U/g resin, the recovery of enzyme fixed was 39�1%, the galactooligosaccharides ( GOS ) production was 24�2%. The method provides technical basis for continuous production of GOS.
