摘要

Abstract

In this study,red pigment from pitaya fruit peel was extracted by ultrasonic -assisted ex-tracting.To determine the optimal extraction conditions,the effect of the conditions,such as the solid -liq-uid ratio,the ultrasonic frequency,the ultrasonic time and the extraction temperature were studied by the single factor experiment and the orthogonal test.The results showed that the order of factor to affect red pig-ment extraction was solid -liquid ratio > ultrasonic time > extraction temperature >ultrasonic frequency. The optimum extracting conditions were as follows:the solid to solution ratio was 1∶40,the ultrasonic time was 25min,the ultrasonic frequency was 80Hz and the extraction temperature was 40℃.Compared with tra-ditional extraction,it saves time and increases efficiency.
