石榴皮多酚的抑菌活性及其在鲜牛乳储藏中的应用
Atimicrobial activity of pomegranate peel extract and its application in storage of fresh milk
摘要
Abstract
The phenolic extracts of pomegranate peel from various cultivars were studied.Total phenolic, hydro-lysable tannins and total flavonoid contents were analyzed for cultivars from China, Yemen and Tunisia.Extract of China pomegranate peel with 50%methanol was stood out for higher bioactive compounds contents and promi-nent antimicrobial activity against Listeria monocytogens, Salmonella, Staphylococcus aureus and Escherichia co-li.The preliminary application of selected PPE as preservative in fresh milk was evaluated and the results showed that the PPE retained the original flavor of milk efficiently.And furthermore, Total account of bacteria of PPE treated milk decreased followed with decrease of pH value and increase of titrable acidity.The results indicated that the PPE has a potential to be used as a natural preservative in milk products.关键词
