Abstract

Objective To explore the application effect of hazard analysis and critical control point (HACCP) combined with six T practical management model on food safety management of school canteen. Methods Twenty-three primary and secondary school canteens in Jian county were selected as the research objects.The management models of HACCP and six T were bound and implemented from January to June in 2014,and the application effect was evaluated. Results The qualified rate of the purchase inspection,demanding certificate and bill,registration ledger after implementation was higher than that before implementation,with significant difference (P<0.01).The qualified rate of the food safety knowl-edge,hand disinfection status and behavior change of the employee in school cafeteria after implementation was higher than that before implementation,with significant difference (P<0.01).The tolal qualified rate of the student plate,table-ware, finished product containers and catering with overall disinfection after implementation was higher than that before implementation,with significant difference (P<0.01).The qualified rate of the health of pantry food containers,utensils and operation table and finished dishes after implementation was higher than that before implementation,with significant difference (P<0.01). Conclusion Establishment of HACCP and six T practical management binding model by school canteens is beneficial to remarkably improve the whole level of food safety,which is worthy of promotion and application in food safety management in school canteen.
