石榴果实发育期有机酸组分及含量变化
Changes in Composition and Content of Organic Acids in Pomegranate during Its Fruit Stage Developing

Abstract
As products of plant primary metabolism or metabolic intermediate,organic acids play a regula-tory role in plant development.Being one of the main sources of flavor,organic acids are rich in pomegranate.In order to provide basis for the study of the flavor formation and the organic acid metabolism way of pomegran-ate,organic acid composition and content of different pomegranate cultivars were analysized during the fruit de-velopment.RP-HPLC method was used to determine both organic acids and Vc contents of'Taishansanbaitian' and 'Taishanhong' pomegranate during the fruits development.The results showed that the organic acid con-tents of the two cultivars had the same trend,both of which were high in the earier growth stage,and reduced before harvest.The total organic acid content of 'Taishanhong' was higher than that of'Taishansanbaitian' pomegranate during the whole developing phase.But both the organic acid composition and content of the two cultivars were different in the whole developing process.The oxalic acid content was the highest in 'Taishan-hong' pomegranate seeds which was up to 23.83~40.70 mg/mL,followed by the contents of citric acid,malic acid,tartaric acid and succinic acid,while the content of citric acid was the highest in 'Taishansanbaitian' seeds which was up to 21.84~30.18 mg/mL,oxalic acid,malic acid,succinic acid and tartaric acid followed.Bits of acetic acid and lactic acid were detected from both the two varieties.Vc contents of'Taishansanbaitian' and 'Taishanhong' were 4.82 mg and 5.90 mg per 100 gram respectively in average during the fruit develo-ping process.关键词
