摘要

Abstract

In this paper, the effect of blanching pretreatment on drying characteristics of coriander was investigated through the experiment.The impacts of hot air temperature, hot air velocity and thickness of materials on the hot air dr-ying characteristics of coriander were investigated by single factor experiment design, and the rehydration test further ob-tained the rehydration characteristics of dried materials under different drying conditions.The results show that higher hot air temperature, faster hot air velocity and smaller thickness of the material will cause greater drying rate and shorten the whole drying time.However, too high hot air temperature, hot air velocity and too small thickness of the material layer can reduce the rehydration capacity of the dried coriander.
