香菜的平衡含水率测定试验研究
Experimental Study on Determination of Equilibrium Moisture Content of Coriander

Abstract
In this paper , moisture absorption and desorption equilibrium moisture content of coriander were measured by the static method and the testing device of the DL104 type electric heating and air drying box while the environmental relative hu-midity changed from 10%to 95 %and the temperature was at different values such as 25℃and 35℃.The moisture desorption and absorption isotherms of coriander were plotted , the effects of temperature and environmental re-lative humidity on the equi-librium moisture content of coriander were analyzed and the safe storage condition of dried coriander was determined .The rus-ults show that the equilibrium moisture content of coriander exists moisture absorp-tion "lagging"phenomenon , the envir-onmental relative humidity has more important influence than temperature on the equilibrium moisture content of corian-der , the mildew phenomena will appear when the dry base moisture content of the sample was greater than 50%and the mil-dew phenomena will become serious when the environmental relative humidity is greater than 60%.关键词
