摘要

Abstract

Okra (Abelmoschus esculentus L.)is a new kind of functional vegetable,which developed rapidly in recent years in China.Its bioactive substances are rich with significant health fuctions.Although some domestic research institutions have studied the extraction technology of bioactive substances and their health functions,the tender pods and other organs of okra are mainly used freshly and directly.The developed products are still single.In this paper,the research progress of bioactive substances and processing of okra was reviewed to provide references for the deep processing and comprehensive utilization of okra in the future in China.
