Abstract

The effect of different postharvest treatments: SO2 fumigation combined with fresh-keeping agent CT2, SO2 fumigation combined with fresh-keeping agent in simplified packet, fresh-keeping agent in simplified packet and fresh-keeping agent CT2 on the texture properties of Victoria grape were analyzed by Texture profile analysis (TPA). The results showed that all the texture parameters of the grape berry in four different treatments decreased in general and the decreasing rule of every texture parameter were different treatments during storage. The berry hardness had good positive correlations with springiness, cohesiveness, chewiness and resilience (R=0.531~0.684), but it had the best correlation with chewiness. Springiness also had good positive correlations with cohesiveness, chewiness and resilience (R=0.750~0.894). Cohesiveness of berry had good positive correlations with chewiness and resilience. During storage, SO2 fumigation combined with fresh-keeping agent in simplified packet could inhibit the decrease of berry hardness, springiness and chewiness.
