摘要

Abstract

Acid⁃catalyzed hydrolysis method was adopted to extract soluble dietary fiber from blue⁃berry pomace, a by⁃product from juice. Effects of material/liquid ratio, pH adjustment of water as extraction solvent, temperature and extraction time on yield of soluble dietary fiber were investigated by single factor experiment and response surface method. The optimal conditions were as follows:pH 1�0, liquid /material ratio ( mL ∶ g) 20 ∶ 1, and 80℃ for an extraction duration of 60 min. Under these conditions, yield of soluble dietary fiber was up to 11�12%. Morphology of soluble dietary fiber was analyzed by scanning electron microscopy.
