铜藻的营养成分分析与营养学评价
Nutrient Analysis ofSargassum horneri and Its Nutritional Evaluation

Abstract
Nutritional components ofSargassum horneriwere analyzed with routine methods. The results showed that mass fraction of crude protein, crude fat,carbohydrate and ash from absolute-dried sample were 8.31%,8.80%,52.31% and 30.68%,respectively. Except tryptophan,17 kinds of amino acids were detected fromSargassum horneri , 7 of which are essential amino acids for human body (26.94% of the total amino acids). Composition of essential amino acids basically conforms to the FAO/WHO standard. The main limiting amino acids ofSargassum horneri were isoleucine,leucine, lysine. The umami amino acids accounted for 40.78% of the total amino acids. The content of polyunsaturated fatty acids covers 32.34% of the total fatty acids . The content of ARA and EPA cover 12.27% and 6.42% of the total fatty acids,respectively. The results showed thatSargassum horneri had a high edible value and health effects.关键词
