摘要

Abstract

Nutritional components ofSargassum horneriwere analyzed with routine methods. The results showed that mass fraction of crude protein, crude fat,carbohydrate and ash from absolute-dried sample were 8.31%,8.80%,52.31% and 30.68%,respectively. Except tryptophan,17 kinds of amino acids were detected fromSargassum horneri , 7 of which are essential amino acids for human body (26.94% of the total amino acids). Composition of essential amino acids basically conforms to the FAO/WHO standard. The main limiting amino acids ofSargassum horneri were isoleucine,leucine, lysine. The umami amino acids accounted for 40.78% of the total amino acids. The content of polyunsaturated fatty acids covers 32.34% of the total fatty acids . The content of ARA and EPA cover 12.27% and 6.42% of the total fatty acids,respectively. The results showed thatSargassum horneri had a high edible value and health effects.
