摘要

Abstract

Cantonese cuisine has advantage in the extensive use of materials,fine choice of materials and pursuit of fresh.The taste is pure and fresh and the flavor is exquisite.It is clean and light,fresh and impressive,tender but not raw,oil but not greasy.Cantonese cuisine is particular about the production and taste,and at the same time it pays attention to the composition of ingredients and the reason-able match of nutrition.The nutritional characteristics of Cantonese cuisine include a wide range of sources,rich in high quality protein, less fat and sodium,as well as coordinating structure in proportion.
