不同品牌蓝莓果汁抗氧化功能研究
Research of antioxidant activity of different brand blueberry juice
摘要
Abstract
Objective To study the antioxidant activity of different brands of commercially available blueberry juice and self-made blueberry juice.Methods The anthocyanins,polysaccharides and Vc content in the different brands of blueberry juice were determined,and total reducing capacity,hydroxyl radical scavenging activity,superoxide radical scavenging capacity,DPPH and ABTS radical scavenging ability of different brands of blueberry juice were analysised based on the antioxidant method in vitro.Results There are some differences between the nutritional composition and antioxidant capacity of different brands of blueberry juice,and showed a significant dose-effect relationship.Con-clusion The self-made fruit juice and blueberry eare a good health food for its possessing the bestantioxidant ability and helping to clear free radicals in the body.关键词
