雁门苦荞黄酮的分离提取、稳定性及抗氧化活性研究
Study on extraction,stability and antioxidant activity of flavonoids from Yanmen Fagopyrum tatari-cum

Abstract
The extraction technology of total flavonoids from Yanmen Fagopyrum tataricum was studied by box be‐hnken response surface methodology .And the stability and antioxidant activity of extracts were also detected .The pro‐cessing parameters of extracting total flavonoids were as following :ethanol mass fraction 77% ,solid‐liquid ratio 40∶1 , temperature of 50 ℃ ,pH value of 5.6. Finally ,the total flavonoid rate was 93.342% .The flavonoid of Fagopyrum tataricum was stable at pH from three to seven .Several factors weren’t effect on flavonoids including temperature ,il‐lumination ,K + ,Na + ,Fe2 + ,Fe3 + and Mg2 + .When the concentration of flavonoids was 0.4 g・L - 1 ,scavenging rate of ・DPPH and ・OH respectively were 82.49% and 83.70% .And the reducibility increases with the concentration in‐crease of flavonoids .The results showed that flavonoids of Yanmen Fagopyrum tataricum had antioxidant activity .关键词
