A Comparative Study of Liushenqu Maltooligosaccharides Activity Test

Abstract
Objective:To compare and analyze the Liushenqu quality of different origin.Methods:Using malt oligosaccharide enzyme activity for the quality evaluation, different origin Liushenqu raw products, fried products maltooligosaccharides enzyme activity compared, and the data were applied by cluster analysis.Results: The maltooligosaccharides enzyme activities of Liushenqu origins were quite different,in which raw products in Guangxi vitality Liushenqu was the highest (509.25 ±7.30)U·g -1 the lowest in Sichuan 2 (37.99 ±0.59)U·g -1 .From the same origin, the enzyme activity of raw product of Hebei 1 (406.97 ± 2.20)U·g -1 was significantly higher than that of fried product (97.19 ±3.99 U)·g -1 .Conclusion:Liushenqu maltooligosaccharide enzyme activity of different origins were different,the same origin raw products Liushenqu maltooligosaccharide enzyme activity greater than fried products.maltooligosaccharide enzyme activity could be used to evaluate the quality of Liushenqu.关键词
