摘要

Abstract

This paper studied the extraction of anthocyanin pigment from black kidney bean.By different types of ethanol concentration,temperature,time and soaking liquid,5 types of the single factors and L16(45)orthogonal design were done to study the best range of extracting.The results showed that the optimum conditions were as follows70%ethanol concentration and 0.5%hydrochloric acid as soaking liquid,rate of solid 1:20,temperature 50 ℃,time 45 min.
