β-丙氨酸对肉仔鸡生长性能、肉品质及胸肌中丙二醛和肌肽含量的影响
Effects of β-Alanine on Growth Performance, Meat Quality, Breast Muscle Malondialdehyde and Carnosine Contents of Broilers

Abstract
This experiment was conducted to study the supplementation of β-alanine on growth performance, meat quality, breast muscle malondialdehyde ( MDA) and carnosine contents of broilers. A total of 180 one-day-old Arbor Acres male broilers were randomly allotted into 3 groups with 6 replicates of 10 broilers each. The control group was fed a basal diet, the experimental groups were fed the basal diet supplemented with 500 (βA5 group) and 1 000 mg/kg β-alanine (βA10 group) , respectively. The experiment lasted for 42 days, including early period ( 1 to 21 days of age) and late period ( 22 to 42 days of age) . The results showed as fol-lows:1) compared with the control group, the average body weight at 21 days of age was significantly in-creased in βA5 and βA10 groups ( P<0.05) , and the average body weight at 42 days of age was increased by 30 and 72 g inβA5 andβA10 groups, respectively ( P>0.05);compared with the control group, the average daily gain inβA5 group had an increase trend during the late period and the whole period (0.05<P<0.10);the ratio of feed to gain in βA5 group was decreased during the early period, the late period and the whole period compared with the control group, and the differences during the early period and whole period were significant ( P<0.05) . 2) Compared with the control group, dripping loss of breast muscle inβA5 group was significantly decreased ( P<0.05) , and the value of a∗ of breast muscle at 24 h in βA5 group was significantly increased ( P<0.05) . 3) Compared with the control group, the content of MDA of breast muscle had a decreased trend with adding 500 mg/kgβ-alanine after slaughtering 2 ( P=0.091) and 4 days ( P=0.059) , and the content of MDA of breast muscle was significantly decreased after slaughtering 6 days in βA5 and βA10 groups ( P<0.05) . 4) Compared with the control group, the content of carnosine of breast muscle was significantly in-creased inβA5 andβA10 groups ( P<0.05) , and was increased by 19.5% inβA5 group and 14.4% inβA10 group. Therefore, the supplementation of 500 mg/kg β-alanine in the diet of broilers can promote the growth performance, decrease the drip loss and the content of MDA of breast muscle, increase the content of carnosine of breast muscle, and improve the meat quality.关键词
