Abstract

Analytical method of determination of Zn and Fe in brick tea and jasmine tea infusions by a-tomic absorption spectrometry were developed using microwave digestion.Then Zn and Fe contents and the dynamic changes of the dissolution rate were investigated after different pre-treatment and at different time.The results showed that recovery rate,standard curve linear range and correlation co-efficient were in accordance with the requirements of the methodology.The content of Zn and Fe in brick tea was determined to be 120.93 mg/kg and 849.50 mg/kg;the content of Zn and Fe in jasmine tea was determined to be 66.13 mg/kg and 236.33 mg/kg,respectively.The highest dissolution rate of Zn and Fe in boiled brick tea was 15.79% and 2.49%;the highest dissolution rate of Zn and Fe in jasmine tea was 40.83% and 8.96%,respectively.This study suggested that rich contents of Zn and Fe in brick tea and jasmine tea were 1 h and 10 min~30 min of infusion time,respectively.
