摘要

Abstract

The purpose of this work was to explore the influence of different cutting board materials on the transfer rate of Listeria monocytogenes from marinated pig tongue to cucumber.The wooden cutting board, one plastic cutting board and one stainless steel cutting board were used.These cutting boards were stayed about 0, 6 and 18 h according to the consumers′ habits. Meanwhile, transferring experiments were performed to mimic the food preparation process by setting four scenarios. And the contamination level ( lg( CFU/g) ) of marinated pig tongue,cutting boards and cucumber were also determined. At the same time,the biofilm formation on different material cutting boards was detected by crystal violet stain and microscope observation.The results showed that the scenario 1,2,3,4 descended orderly under the cutting board of same material,and the transfer rate of wood cutting board was significantly higher than that of the other two cutting boards under the same scenario.The transfer rate of L. monocytogenes from plastic cutting board to cucumber was similar to those from plastic cutting board to stainless steel cutting board. In addition,biofilm of L. monocytogenes was not because the strain could not form a cyclic structure within the treatment of 6 and 18 h.
