金针菇中单增李斯特菌生长预测模型的建立
Establishment of Listeria monocytogenes growth predictive modeles in edible mushroom Flammulina velutipes
摘要
Abstract
We established a growth model of Listeria monocytogenes in edible mushroom Flammulina velutipes at different temperature. Listeria monocytogenes was inoculated to the mushroom to obtain growth data at 10,15,20,25 and 35℃.Baranyi model was fitted with the primary growth model to get the maximum specific growth rate. By fitting temperature to the maximum specific growth rate kinetics in the primary model,we established Ratkowsky,Huang rate,Cardinal and Arrhenius⁃type model.The Arrhenius⁃type model can be used as a secondary model at different temperatures for the growth of Listeria monocytogenes in the mushroom,with a good linear relationship,and the prediction results were better than the other models.关键词
