植物乳杆菌的功能评价
Gastrointestinal survival and beneficial properties in vitro of Lactobacillus plantarum strains

Abstract
Six lactic acid bacteria were isolated from fermented vegetable made in the laboratory, and identified as Lactobacillus plantarum by physiological, biochemical and molecular biology tests. L. plantarum Z22,one of six strains of L. plantarum,had strong gastrointestinal resistance,with the survival rate was 95�45% in the simulated intestinal juice and 45�24% in gastric juice. The strain could remove 65�80% cholesterol in vitro. The extracellular polysaccharide EPS⁃S and EPS⁃Z of L. plantarum Z22 could scavenge 1,1⁃diphenyl⁃2⁃picrylhydrazyl radical (·DPPH),hydroxyl radicals (·OH) and super⁃oxide anion radicals (·O-2 ) ,the scavenge rates were 27�75%,66�16%,58�00% and 24�02%,59�03%, 45�20%,respectively.The antioxicant activity of poly saccharide EPS⁃S is higher than that of EPS⁃Z.关键词
