大麦醇溶蛋白/纳米TiO2可食性膜的抑菌效果及对草莓的保鲜作用
Antibacterial effects of hordein/nano-TiO2 composite film and its application for strawberry preservation
摘要
Abstract
We prepared an edible film using hordein obtained in laboratory as the main material and nano⁃TiO2 particle as the modified material. The coating was used to treat strawberry. The weight⁃loss rate, hardness,soluble solid content,vitamin C content,total acid content and decay rate of treated strawberry during storage were periodically measured for investigating its fresh⁃keeping effect. The results showed that the weight⁃loss rate was 6�2% ( for 4 d ) , lower than that of the control ( 6�8% for 3 d ) , and the decay rate was 2�4% (for 4 d), lower than that of the control (3�1% for 3 d).And the hardness,soluble solids content, total acid content, vitamin C content were higher. Hordein/nano⁃TiO2 edible film could effectively prolong the storage of strawberry.Bacteriostatic test showed that the diameter of inhibition zone against Staphylococcus aureus and Escherichia coli was respectively up to 18�2 mm and 17�6 mm,and had a superior performance of bacteriostasis.关键词
