不同品种喷雾干燥草莓粉抗氧化物质及其活性研究
Study on Antioxidant Content and Activity of Spray-Dried Powder of Different Strawberry Varieties

Abstract
The content,composition and activity of antioxidant substances were determined in the spray-dried powders of 5 strawberry cultivars.It was found that the contents of antioxidant substances of different cultivars had larger difference.The total phenol content was in order of'Mei 13'>'Meiguixiang'>'Hongyan'>'Tianbao'>'Fengxiang'.The flavonoid content was in order of'Meiguixiang'>'Mei 13'>'Hongyan'>'Fengxiang'>'Tianbao'.The anthocyanin content order was same to that of total phenol content.The main non-anthocyanin phenolics were epicatechin,ellagic acid,catechinic acid and chlorogenic acid.The DPPH · scavenging rate and FRAP were used to reflect the antioxidant ability.The significant positive correlation was found between antioxidant activity and total phenol and flavonoid contents of spray-dried strawberry powder.关键词
