云南黑山羊屠宰性能研究
Slaughter Performance of Yunnan Black Goats

Abstract
The slaughter characteristics and physical properties of longissimus dorsi of Yunnan black goats were studied in this paper.The animals were under barn feeding condition.Six 6-month-old rams and six 12-month-old rams were used in this experiment.Pre-slaughter weight,carcass weight,dressing percentage,eye muscle area,GR value and ratio of meat to bone of 6-month-old rams were 39.92 kg,20.98 kg,54.46%,14.59 cm2,0.86 cm and 3.89,respectively.The corresponding indicators of 12-month-old rams were 54.37 kg,27.80 kg,51.78%,16.79 cm2,1.12 cm and 3.43,respectively.The score of meat color,marbling score,pH 45 min,water loss rate,cooking percentage,drip loss and tenderness of 6-month-old rams were 4,1.5,6.27,5.22%,56.31%,3.71% and 59.57 N,respectively;the corresponding indicators of 12-month-old rams were 4.6,1.6,6.37,5.41%,54.19%,3.26% and 60.23 N,respectively.The results showed that Yunnan black goat had good meat production performance.关键词
