Research Progress in Relevant Candidate Genes of Animal Intramuscular Fat Deposition
摘要
Abstract
Intramuscular fat ( IMF) content is an important factor in the evaluation of meat quality,which plays important roles in flavor, tenderness and texture of meat sensory quality, however, the regulation of intramus?cular fat deposition is mainly affected by three metabolic pathways, namely, fat uptake, synthesis and decom?position. This paper reviewed the related candidate genes of intramuscular fat deposition, preliminarily revea?ling the influence mechanism of fat metabolism, so as to provide a theoretical basis for further study of the reg?ulation of intramuscular fat deposition.关键词
