Effects of Alpha-Lipoic Acid Supplementation on Growth Performance and Meat Quality of Broilers Exposed to Ammonia Stress

Abstract
This experiment was conducted to investigate the effects of alpha-lipoic acid (LA) on the growth performance and meat quality of broilers under ammonia stress.A total of 120 male broilers (22-day-old) were randomly divided into two groups for 21 days (6 replicates per group,10 birds per replicate):ammonia stress group (exposed to 70 ppm ammonia),LA group (exposed to 70 ppm ammonia and feed with 300 mg/kg LA).Results showed that:under ammonia stress,the addition of LA significantly increased ADG (P<0.05) and decreased FCR (P<0.05) of broilers,remarkably decreased color b*,color L* and drip loss rate (P<0.05),and increased pH (P<0.05) in breast meat.LA significantly reduced malondialdehyde level (P<0.05) in breast meat,and the hydroxyproline content (P<0.05),but the free fatty acid content was significantly increased (P<0.05).The results suggested that LA supplementation can improve growth performance and alleviate meat quality of broilers under ammonia stress.关键词
