晋南牛公牛与阉牛育肥性能和肉品质的比较研究
Comparative study on fattening performance and meat quality between Jinnan cattle bulls and steers

Abstract
The purpose of this experiment is to compare the fattening traits,slaughter performance and meat quality between Jinnan cattle bulls and steers.Twenty healthy bulls and steers at the similar age and body weight were chosen to perform intensive fattening experiment and to measure carcass traits including every meat parameter.The results showed that the average daily gain of bulls,liveweight,carcass weight and eye muscle area were significantly higher than steers (P<0.05),while aged beef quality cutting rates were not different between treatments (P>0.05).After 72 hours,shear force of steers was significantly better than those of bulls,marbling was significantly lower than those of bulls.The pH value,driage and meal color were not different (P>0.05).The marbling grade of steers reached 3 grade that was close to standard high-grade beef.Therefore,Jinnan cattle can produce high-grade beef fattening by castration.关键词
