Abstract
Skeletal muscle is made up of different types of muscle fibers which characterized by the myosin heavy chain isoform composition and consists of up to four main types: Ⅰ, Ⅱa, Ⅱx and Ⅱb.The composition of muscle fiber type in skeletal muscle influences the meat quality after animal slaughter.The skeletal muscle fiber type transformation can be regulated by different signaling pathways and regulatory factors in vivo and also by nutritional factors in diet.This review summarized the underlying signaling pathways and certain nutritional factors, for reference in understanding of improving meat quality through nutritional intervention.关键词
