Optimization of Extraction Process for Total Water Soluble Proteins in Fermented Centipede Powders by Orthogonal Test

Abstract
Objective:To optimize extraction process for total water soluble proteins in fermented centipede powders. Method:With the water soluble proteins as the index,the orthogonal experiment design method of L9 (34) was used to evaluate the influence by extraction time,pH value,and material–liquid proportions on content of the water soluble total proteins of centipede powder ,based on the study for single factors ,and the optimized extraction process was determined. Results:The optimized extraction process for water-soluble total protein from the fermented centipede powder was as follows:adding 20-fold distilled water with pH value of 9 and under ultrasonic extraction for 150 min;the water soluble extractions of the fermented centipede pow-der had a good inhibitory effect on mammary gland MCF-7 cells. Conclusion:In this experiment,the opti-mized extraction process of total protein from fermented centipede powder was convenient and feasible ,and can accurately reflect the total protein content with certain anti-tumor effect.关键词
