黑羽和白羽沐川乌骨黑鸡肤色性状及屠宰性能对比分析
Comparative Analysis of Skin Color and Carcass Traits between Black and White Plumage Muchuan Black-bone Chicken

Abstract
The experiment was conducted to study the difference of skin color and carcass traits between white plumage and black plumage chickens.A total of 100 white plumage and 30 black plumage female Muchuan black-bone chickens were employed in the study,respectively.The "L," "a," and "b" values of different parts for every chicken skin were determined by a portable colorimeter.A total of 20 female chickens,including 10 white plumage and 10 black plumage chickens were slaughtered to determine the carcass traits and melanin content.The difference of skin color,carcass traits and melanin content were analyzed between white plumage and black plumage chickens.The results showed that the "L" values of dorsal skin and armpit skin were significantly higher in black plumage chickens than in white plumage chickens (P<0.01),respectively.No significant difference in the "L","a" and "b" values of Shank color were observed between black plumage and white plumage chickens (P>0.05).The black plumage chickens showed no significant difference on carcass traits compared white plumage chickens (P>0.05).The skin and breast muscle had significantly higher melanin content in black plumage chickens than those in white plumage chickens respectively (P<0.05).In conclusion,compared with the white plumage chickens,black plumage chickens had a strong ability of melanin pigmentation.关键词
