Grafting Laccase-catalyzed Oxidation of Phenolic Acids onto Oligochitosan

Abstract
Oligochitosans were grafted with ferulic acid,protocatechuic acid and gallic acid by tyrosinase.Linear potenti-ometric titration,FTIR and TGA were used to characterize the graft ratio,structural changes of grafted product and its anti-oxidant and hygroscopicity.The results show that the phenolic hydroxyl in phenolic acid reacted with amino-group in the oligochitosan initiated by tyrosinase in this catalytic process,confirming the occurrence of a Schiff-base reaction.The ther-mal stability,antioxidant property and moisture absorption of the grafted product have all been improved.After 5 min reac-tion,the oligochitosan-ferulic acid,oligochitosan-gallic acid and oligochitosan-protocatechuic acid compared with the free radical clearance rate of oligochitosan increased by 20.15%,66.30% and 89.21%,respectively.关键词
