番茄果实不同发育时期有机酸组分及含量分析
Analysis of Organic Acid Components in Tomato Fruit During Different Development Stages

Abstract
This paper took tomato(Solanum lycopersicum L.)genotype homozygous varieties'0-33-1','Naiyun 2000','Jianhuang','Qingshu'and'Mantian 206'as experiment material and measured the changes in contents of citric acid,malic acid,oxalic acid,succinic acid,tartaric acid and acetic acid by high performance liquid chromatography(HPLC),and gas chromatography at different tomato fruit development stages (green ripening,turning and maturing stages).The result showed that contents of organic acid components in 5 tomato varieties were different from each other during 3 development stage.Among them,the citric acid content was the highest from 0.814-1.470 g·kg-1,accounting for 21.19%-40.64% of the total acid.Acetic acid content,accounting for 1.25%-4.40% of the total acid,was the lowest organic acid ranging from 0.046-0.130 g· kg-1.Viewing from the organic acid components,tomato belonged to fruit of citric acid type.Generally the total acid content was decreasing and citric acid content was rising during the fruit development stage.关键词
